Thompson Bros – Dailuaine 2010, Imperial Stout Finish, 48%

A bottle which has disappeared waaaaay faster than expected, this was a 50/50 bottle split between myself and fellow member @awhiskybond who also appreciates all things T.Bros. We were both intrigued by the use of ex-imperial stout casks and rather than go the full the hog (which I now regret) we decided to do a wee 35cl split to keep the spending at a low.

Having not much experience with any stout finishes previously, I’ve struggled a wee bit to pinpoint where the key differences are away from the classic Dailuaine hoggie profile. Not a bad thing but it’s certainly fuelled the fire of wanting to explore further as a hobby and at work…

Lots of sweet and sour vibes, with tangy green apple, malted loaf, “expensive” milk chocolate and a creamy yet bitter after note that reminded me of craft amber/dark ales, stouts, porters etc. I found it quite enjoyable as a lighter option rather than reaching for a sherried option. Well done on the distillery choice as Dailuaine would certainly list high on what I would want to fully mature or finish in stout. Possibly even Benrinnes or Clynelish too, with their robustness if I had the options at hand?
